Brief description of the degree course
Caratteristiche e finalità
Lo studente consolida le conoscenze nelle materie scientifiche di base quali fisica, matematica, biostatistica, chimica e biochimica; studia i sistemi animali e vegetali approfondendo tematiche di zoologia, anatomia e fisiologia degli animali da reddito, zootecnica applicata, e acquisendo principi di agronomia ed economia agroalimentare; sviluppa competenze specifiche nella valutazione delle caratteristiche chimiche e microbiologiche, della qualità, degli xenobiotici potenzialmente presenti negli alimenti e delle tecniche di trasformazione degli stessi; studia le patologie degli animali trasmissibili all'uomo attraverso gli alimenti derivati e l'analisi del rischio per il consumatore; conosce i sistemi di certificazione di processo e prodotto, delle procedure di autocontrollo aziendale e sviluppa competenze di legislazione agroalimentare e di economia dei mercati; approfondisce le tematiche di igiene e sicurezza negli ambienti di lavoro e si avvicina al mondo del lavoro con visite didattiche e attività di tirocinio in aziende e laboratori della ricerca.

Ambiti occupazionali
Il laureato si occuperà della gestione tecnica, igienica ed economica delle imprese agro-alimentari oltre che degli approvvigionamenti e del controllo di qualità del prodotto. Sarà esperto delle procedure per la gestione igienica della produzione degli alimenti e delle bevande, oltre che nella formazione e nell'aggiornamento degli operatori, con specifico riferimento alle buone prassi igieniche di lavoro e all'applicazione della normativa sulla produzione alimentare. Inoltre, potrà svolgere attività di consulenza per gli aspetti tecnico-produttivi, igienico-sanitari e normativi presso aziende che offrono servizi per il settore agro-alimentare, nella ristorazione collettiva e nella grande distribuzione, oppure trovare occupazione come operatore tecnico nei laboratori pubblici e privati che forniscono servizi alle aziende agro-alimentari. Il laureato potrà svolgere attività di supporto alla gestione tecnica per il miglioramento qualitativo, quantitativo e igienico-sanitario delle produzioni primarie e del benessere animale nelle aziende zootecniche e agro-zootecniche.

Dalla triennale alla magistrale
L'accesso ai corsi di laurea magistrale che vertono nelle aree scientifiche della produzione animale, oppure della produzione alimentare o del controllo degli alimenti avviene previa integrazione di alcune attività formative da svolgersi nel sesto semestre nell'ambito del pacchetto dei CFU a scelta dello studente.
